Mini-Quiche Recipe
I don't know how this blog suddenly became a Food Reviewing blog.. so let's go back to basics... how and when it all started... my cooking and my recipes....
I wanted to make quiches' for the longest time after seeing how simple it was on Martha Stewart's program (I was a bit of a couch potato when I was unemployed)
Not having any of the proper fancy tools, I improvised =) And cheated a bit...
Using store bought short-crust pastry... I cut up circles by free hand...
Cooked each individual ingredient...spinach, bacon pieces, mushrooms, caramelised onions...and diced up some lovely tomatoes
Greased my muffin tray with butter
Put half a cup of milk, half a cup of thick cream, 2 eggs, 1 eggyolk, a pinch of nutmeg.. and just switch on those muscles for some whisking action
Place each individual circle into the muffin slot, molding it as you go, and fill it up with the cooked ingredients
Top up with a generous serving of Parmesan (recipe calls for Gruyere cheese.. but it's expensive)
Pop-it into a preheated oven (350degrees) for 45 mins or until brown...
Let it rest before serving it up...
There you go! My lovelies....
It was so delicious to have freshly baked mini-quiches that I went into baking mode...
And again, lacking the right utensils (meant to have used a flan pastry baking thing)
I used a spring-foam baking dish and got what I wanted anyway...
With the same quantities used as for the mini quiches, it makes 1 quiche
I took it to work proudly for the next couple of days and the smell was gorgeous when I heated it up...!
*sigh*... I'll make more with different fillings the next round...
