Prawn & Avocado Salad and Paprika Chicken Recipe

Today, I shall show you how to make 2 dishes.. (I've accumulated too many pictures again)...

First up is a simple Prawn and Avocado salad (served warm)... and second is a Paprika Chicken served with Glass Noodles (I used Mung Bean Noodles)

Colourful assortment of veggies (Cherry Tomatoes, Avocado, Sweet Potato [cubed] and snow pea sprouts)



Banana Prawns (you need to shell them whilst leaving their tails intact, and devein them), Dill, Lemon and baby Rocket and Spinach Leaves



Firstly, cook the prawns really quickly by boiling them...



I cooked the sweet potato and snow pea sprouts as well




Yogurt, Rice Wine Vinegar and Black Pepper



For the dressing, you need 2 tablespoons of yogurt, 2 tablespoons of rice wine vinegar, 2 tablespoons of tomato sauce, 2 tablespoons of lemon and cracked pepper to taste



Whisk the dressing to mix all the ingredients...



Layer your salad (I like my avocado right at the top, as I don't like them squashed), and drizzle the dressing over it...



To accompany the salad... I had this chicken dish (which can also be used for prawns)

All you need is, salt, pepper, paprika, butter (to fry) and a wedge of lemon



Pan-fry the marinated chicken (paprika and salt and pepper) in butter and 1 tablespoon of olive oil



Whilst that is being done, boil some water and chuck in the noodles (don't overcook it - a minute or 2 is enough) - I used the same stock from the prawns, snow pea sprouts and sweet potato



Place the noodles on the plate and toss with some olive oil (it tends to stick together when it cools down)...

Place the chicken pieces on top of some snow pea sprouts (you don't need veggie, I just thought it'd look prettier)... and drizzle the butter and paprika sauce over it

To serve, squeeze a wedge of lemon



A most enjoyable, yet simple meal... i ate bits of the salad with the noodles as well.. hohoho...
