Love Like Winter Part II
Yes, I know. It is the same picture from before.. but it's just to spark your memory ont he topic here, which is Rice in Winter.
So now for the Boy's Seafood Paella.
We bought some clams, calamari rings (squid), and Banana prawns
1 Chorizo (Spanish Sausage - Lap Cheong style), 1 lemon and about 3 chicken tenderloins (sliced)
Fry the chorizo and bacon slices in olive oil
Set aside for later
Using the same oil, fry 1 sliced shallot
Add in the chicken, and vegies one at a time as you go, lastly with the italian diced tomatoes
Stir thoroughly...and add in the baby corn
Add in about 2-3 strands of saffron...
Add in 2 cups of rice (washed and drained).... LOOK at the colour change ;)
Allow to simmer and cook for about 10 minutes.
Then add in the clams...
Add in some sparsely chopped up sprigs of parsley
Simmer for a further 5-10 minutes and add in the calamari...
Repeat and add in the prawns...
Serve hot in pan and garnish with lemon, and adding in the chorizo and bacon...
Delicious! And yes, it had a beautiful burnt bottom...
I'm sure I've missed out on some steps and ingredients... as usual, I wasn't paying attention to the Boy cooking. This time... I had a good excuse.. I was busy cooking my own dishes!
