The past couple of days of melancholy have been cured... what an evil thing hormonal imbalance is... GAH!
So anyways, due to some trigger of happy memories, I decided to try and replicate a Honey Ginger Chicken dish that I always use to have in Kay Elle (Kuala Lumpur).
It was next to this dilapidated Church in a zinc covered area, and it served the best Chinese home cooked meals. My mummy used to take us there to eat. I have no idea where it is, but I can tell you it no longer exists... highway expansion and all that jazz... the place is gone.
This recipe below is an imitation, obviously I was too young to know how they cooked the Honey Ginger Chicken dish... Big Sis... You would remember this =)
So anyways, this recipe could be better improved if I had a whole chicken chopped up, (I only used 1 chicken breast - this was an experiment after all, a very successful experiment!) and if I had a Wok/Kuali with a huge gas stove.
We make do with what we have...
I marinated the pieces of chicken (which I've cut into huge chunks) with:
1/4 cup light soy sauce, 2 teaspoon of 5 Chinese 5 spice powder, 1 tablespoon of think soy sauce, 1 teaspoon of fish sauce, 2 teaspoons of raw sugar, salt and pepper to taste
I left it to marinate for about 3 hours
Once I was ready to prepare dinner, I drained the chicken from the marinade and covered them lightly with corn flour
Into a hot pan they go into, to give them a crisp outer shell. You want to do this fairly quickly, so as not to burn the coating and not to overcook the chicken
Once done, let them rest on absorbent paper (kitchen towels) and set aside.
Heat up 2-3 tablespoons of oil and toss in some roughly chopped ginger
Fry until the ginger gets slightly brown, and then squeeze about 3 tablespoons of honey into the pan
Quickly toss the fried chicken pieces into the mixture and coat evenly
And there you have it, Ladies and Gents... a most delicious serving of chicken...
Very sweet, crispy and crunchy with a zest of ginger Zing!!
